I didn’t always like sweet potatoes. It wasn’t until I went Keto a couple years ago that I started experimenting a little with them. You see, I’m a meat and potatoes kind of girl. I don’t think a meal is complete without a meat, a starch, and a vegetable- bonus points for bread too.

Cook Time: 5 minutes
Additional Time: 10 minutes
Total Time: 25 minutes

This recipe will knock your socks off with layers of flavor that your sweet potatoes have never seen!

Ingredients

  • 2 lbs sweet potatoes cut into bite-sized pieces, about 5 medium sized potatoes
  • 1 lb sausage sliced thinly, about 2 large links
  • 1 large sweet onion sliced
  • 2 tbs olive oil
  • 1/4 cup honey
  • 1/2 cup brown sugar
  • 1 tsp salt
  • 1/4 tsp cayenne
  • 1/2 tsp pepper
  • 1/4 cup water

Instructions

  1. Turn your pressure cooker to the SEAR/SAUTE setting and add oil.
  2. Add thinly sliced sausage and begin to brown. You'll want the sausage to cook for about 4-5 minutes so that it gets a good color and a little crispy.
  3. Add onion. Saute for another 4-5 minutes until onions begin to caramelize.
  4. Add sweet potatoes, seasonings, honey, brown sugar, and water, stir until everything is well coated.
  5. Sear for another 4-5 minutes as everything blends.
  6. Close and lock pressure cooker, cook on HI pressure for 3 minutes.
  7. When pressure cooker beeps, unplug it and let it sit for about 3 minutes. (3 minute NPR) After 3 minutes, release the pressure.
  8. Serve with your favorite toppings; like green onions, butter, cinnamon, etc. ENJOY!

A little tip: I seriously can’t get enough of this recipe! It’s a little too spicy for my kid’s little taste buds, so if you want it to be more family-friendly, I suggest cutting back some of the cayenne/pepper. Don’t omit it completely, but maybe half it!

These are the flavors of fall! You can also use maple syrup as a sweetener, maybe even add an apple or two.

  2. This was a very good recipe. I had white sweet potatoes from the garden and also the regular orange ones. I steamed green beans on top. Very good. I will make this again. And I don’t even like sweet potatoes.

  3. It was easy to make and tasted delicious. Thank you! We will be making it again!

  4. Oh my!!! I made this last week with a few of tweaks. First, I sautéed a couple strips of diced bacon until crispy. I added mild Italian sausage (didn’t have any spicier sausage in my freezer) then the onion. Secondly, I didn’t add any of the sugar or honey as my husband is diabetic but used a bit more of the spices and a touch of nutmeg. Seriously yummy and super easy, this recipe is a keeper!

  5. I was interested in trying this, but when I saw it has 3/4 c sugar in it, I think I will pass! That’s a lot of sugar for a main dish meal that would probably taste fine without it, especially when I never add sugar to my sweet potatoes.

Sandy, the sugar is a preference. You can most definitely make this recipe without it, but I do suggest the honey. A little extra sweetness to offset the spice of the cayenne will do wonders!
