Until recently, the closest I’ve gotten to a pressure cooker breakfast was making boiled (steamed?) eggs. FYI, we use the 5-5-5 method. 5 minutes HI pressure, 5 minutes natural release, 5 minutes ice bath. perfect eggs every time, no matter how many you do.

Honestly, I love breakfast, but I usually skip it and just head for the coffee. Being pregnant means that I really need to get in all 3 meals, and they really need to matter. Until now that is. I have so much love for my pressure cooker that I’m kind of close to getting rid of all my other kitchen gadgets. I seriously love this piece of machinery and am secretly hoping that Christopher got me that amazing 8 qt pot for Christmas.

On a more serious note, I wanted to create a power-packed breakfast that would be easy, nutritious, delicious and make-ahead. I accomplished all of those things with this UUUHHHMAYYZEINNNG Pressure Cooker Breakfast Egg Bake.

Eggs, sausage, cheeses, mixed together with spinach, onions, and garlic, topped with Feta and Bacon, eaten with salsa and guac; ermahgersh to all things that make us say YUM and absolutely mean it. It tastes great hot or room temp, freezes and reheats like a charm!

Pressure Cooker Breakfast Egg Bake

Pressure Cooker Breakfast Egg Bake

Yield: About 6 Servings

This delicious, power-packed breakfast egg dish is perfect for those busy mornings when you need an extra pick me up!

Ingredients

  • 7 large eggs
  • 1 cup fresh spinach
  • 8 oz ground breakfast sausage
  • 1 cup Italian blend cheese, mozzarella, parmesan, provolone, romano mix
  • 1/2 cup heavy whipping cream, or milk
  • 1 small onion, minced
  • 2 cloves garlic , minced
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp cayenne
  • 1/4 cup feta cheese, crumbled
  • 3 slices bacon, already cooked

Instructions

  1. Set your pressure cooker to Saute/Sear and begin browning sausage.
  2. While sausage is browning, add 7 eggs, seasonings, Italian cheese mix, and heavy cream (or milk) to a medium-sized bowl and mix well.
  3. When the sausage is near brown, add minced onion and garlic. Saute until soft, 2-3 minutes.
  4. Turn off the sear function, then add spinach and stir until slightly wilted. 
  5. Add sausage, garlic, onion, spinach mix to egg mixture. Stir. Pour the mixture into a greased, oven-safe bowl or springform pan. Drop crumbles of feta cheese across the top of the egg mix.
  6. Wipe out your pressure cooker, add 1 cup water, and a trivet. (optional: create a foil sling for under your egg bowl, for easy removal) Place the bowl with egg mixture onto the trivet. 
  7. Close and lock the lid. Cook on HI pressure for 20 minutes. 
  8. When the timer goes off, unplug your pressure cooker and perform a 10-minute natural release.
  9. When you remove the breakfast egg bake, steam may have caused the top to have a little water on the top, simply blot it with a paper towel. 
  10. Top with crumbled bacon, guac, salsa, or your favorite egg toppings! Enjoy!

It’s super easy to turn this recipe into something of your own; switch out the spinach for kale or another green, add in broccoli or mushrooms, change up the cheeses. If you want to leave out the heavy cream for milk, that’s fine too! Just be sure that you make enough because everyone gobbles it up quick!!
