Cabbage is the food of a true southerner’s dreams, and I ain’t talking about coleslaw either. I’m talking about a bowl full of cabbage that’s been simmering away all day, smothered in yummy Cajun seasonings, and basking in its own flavorful goodness.

I can literally slurp the juices up like a cup of coffee, dunking some sweet buttery cornbread in it like cake. Unfortunately, not everyone feels like me and my picky eater husband is not fond of anything to do with it. So when I’ve got that craving for cabbage, I wait till he’s at work and I whip up a pot of this pressure cooker boiled cabbage and sausage.

No more cooking all day, because we’re getting all that delicious flavor under pressure in minimal time. No more overwhelming cabbage smell lingering in the house, because I can eat and have everything cleaned up before he even gets home. The bonus is that I never have to hear him complain about my ‘stinky supper’ anymore.

You can choose to use whatever brand of sausage that you prefer. A southern andouille is almost always my favorite because of the smokey flavor it infuses into this pressure cooker boiled cabbage and sausage. Just make sure that the sausage you choose is packed with flavor!

I’ve tried this recipe using frozen fresh cabbage and it just isn’t the same. It tastes almost as though it’s wilted, I’m guessing the excess water that it gives off while defrosting. So you’re best bet is to cook it fresh.

If you have an 8qt or larger pressure cooker, you shouldn’t have a problem cooking a whole head of cabbage and just doubling this recipe. But if you have a 6qt, I would stick to this recipe to not overcrowd/overflow you’re pot.

Southern Style Pressure Cooker Boiled Cabbage and Sausage

Yield: 6 Servings
Prep Time: 5 minutes
Cook Time: 3 minutes
Additional Time: 5 minutes
Total Time: 13 minutes

Ingredients

  • 1/2 head fresh cabbage chopped
  • 1/2 lb sausage, thinly sliced
  • 2 tbs oil
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 tsp cayenne
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 2 cups water
  • 2 cups broth, chicken or bone

Instructions

  1. Turn your pressure cooker onto SEAR/SAUTE setting and add the oil. 
  2. When the oil gets hot, add your sausage and brown for about 5-6 minutes. You'll want the sausage to get very brown that way it holds up when you "boil" it.
  3. Once the sausage is browned, add the cabbage and all seasonings. Stir to make sure everything is coated evenly. 
  4. Add the water and stock/broth (try our pressure cooker bone broth recipe). Close and lock lid. Cook on HI pressure for 3 minutes.
  5. When the timer goes off, unplug the pot and let the pot sit for 5 minutes (5 minutes NPR). After 5 minutes, manually release the rest of the pressure. 
  6. Serve with sweet and buttery cornbread! ENJOY!

This recipe, like many of our recipes, can be made your own by simply changing a few things! You can add onions for a little extra depth of flavor. Skip the bone broth and have the cabbage create its own yummy broth. You could also use the leftover cabbage broth for a great starter on a vegetable soup!

  1. Thinking about doing this. But I dont seem to have chicken broth. I have beef broth though, still looking for that southern cooking. How different do you think…or would it be better to use the chicken bullion cubes

      Either way would be fine! Beef would give t a more “earthy” and deep flavor.

  2. I like to add macaroni noodles in with mine. I’m new to the Instant Pot world. How would I go about cooking those in there as well? Trying to find a way to cook everything in the pot. Thanks!

      Noodles usually take about 3 minutes, so your cook time shouldn’t change. However, I’m not quite sure about the liquid portion. I’d have to test it myself to be sure, but I almost want to say to double the amount of liquid to ensure that the noodles cook properly. If you try, let me know how it came out!
