I don’t know about you, but we grew up eating can beans. Actually, my husband doesn’t eat fresh green beans. #pickyeaters But, anyways. I like fresh green beans, and I like canned green beans- it just depends on how you cook them that matters.

My mama used to make the most incredible smothered green beans. You basically just cook the heck out of canned beans by “frying” them in a little oil and water. But they end up as such a scrumptious and delectable dish that I could eat a whole pot of in one sitting.

I was working on my Instant Pot baby food the other day and it hit me; I can make southern style smothered green beans right in my pressure cooker in no time! So, here we go. Instant Pot Green Beans that I know the whole family will enjoy!

To give green beans a little extra flavor, I love cooking them with some type of salt meat. Whether that be bacon, sausage, tasso, whatever your preference, it gives the taste buds something fun to latch to!

The other thing to think about is the texture you prefer. For a firmer veg, you won’t want to cook them under pressure for as long. But if you like a softer green bean, then have at it!

Take your preferred meat, chopped finely, and saute it in your pressure cooker until it’s very brown. Not burnt, but brown. I use whatever meat I have leftover in my fridge. Because we’re cooking the meat in liquid, it will soften entirely, so you may want to be close to overcooking. Yet, that may just be preference.

Chop your onion finely (another thing my picky-eater-husband hates in green beans) and saute it in your with your meat until it’s slightly soft. Again, it will cook with your liquids. Add your fresh green beans and saute for about a minute or two, just to meld the flavors together.

Take 1/2 cup broth or stock- you can use bone, vegetable, chicken, beef, or whatever you have on hand- pour it inside and then close and lock the lid. At this point, you can choose how “done” you prefer. For a softer texture, go about 5-6 minutes. For a firmer texture, about 3-4 minutes.

Pressure Cooker Green Beans (Southern Style)

Yield: About 8 Servings
Prep Time: 5 minutes
Cook Time: 1 minute
Total Time: 6 minutes

Delicious, flavorful, smothered and southern style pressure cooker green beans are to die for! 

Ingredients

  • 1 tbs oil
  • 2 lbs fresh green beans, trimmed and cut in half
  • 1/4 lb. meat, ham, bacon, sausage; optional
  • 1/2 cup liquid, water, broth, or stock
  • 1 small onion, finely chopped

Instructions

  1. Turn your pot to Saute and add your oil. To the oil, add the finely chopped meat of choice. You'll want small pieces so that it cooks well and is bite-sized.
  2. When your meat is browned well, add the onions until they become soft. 
  3. Add your green beans and lightly saute for about 1 minute. This helps your green beans to develop a deeper flavor. 
  4. Add your desired liquid (broth or stock will make the green beans more flavorful). 
  5. Close and Lock the lid, cook on HI pressure for 3 minutes and then perform a quick release of the pressure ASAP. 
  6. Enjoy!

    Perfectly cooked green beans! My husband always hated green beans, except when I started roasting fresh French green beans in the oven. A neighbor gave us some fresh beans from her garden so I decided to use this recipe and it was so good, the flavor was just like my mom always cooked, but without being “boiled to death” like my hubby hates. They still had some bite and color to them but were fully cooked, and awesome.
