Christmas is right around the corner and I’m in that “in-between” stage of being ready, but not prepared. It’s my absolute favorite holiday to be with family and friends, celebrating The Savior’s birth. But at the same time, I’m so far from being prepared.

I’m still shopping, I hadn’t wrapped the first gift, I’m not even sure what the full schedule is, and least of all, I hadn’t even thought about what I’m cooking yet. The worst part is that I’m in a tiny house and have limited space for cooking. But the really good part is that my trusty pressure cooker always comes to my rescue and I can’t wait to make some of these Instant Pot Christmas Dishes!
