Growing up, there weren’t many things that my mama didn’t make from scratch. I remember the old bread making machine she’d put up on the counter, the yummy smell of homemade bread that filled our house, and the extra hefty helping of real butter that seeped into that warm fluffy goodness.

Ingredients

  • 2 tbs butter
  • 1 tsp salt
  • 1 tsp pepper
  • 1/4 tsp cayenne
  • 1 small onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 4 cups chicken broth, or bone broth
  • 2 cups long grain white rice
  • 1 cup raw angel hair pasta, broken into 1/2 inch pieces
  • 1/4 cup chopped Parsley, optional

Instructions

  1. Turn your pressure cooker to saute and add butter.
  2. When butter is melted, add onion and cook for 3-4 minutes until translucent.
  3. Add garlic and cook for another 1-2 minutes.
  4. Add rice and noodles and cook until noodles begin to brown. About 5-6 minutes.
  5. Add broth and seasonings. You should be able to stick your finger on top of the rice and measure the liquid to the first knuckle. If there isn't enough liquid, add a little water.
  6. Close and lock lid. Cook for 3 minutes on HI pressure.
  7. 5-minute natural release then quick release.
  8. Fluff with a fork, add parsley as a garnish.

  1. First knuckle? Seriously?

    1. Brooke Poston says:

Yep! In the South, that’s the way we always measured for fool-proof rice! I learned that from my mom, who learned from her mom, and so on! But if you aren’t familiar with that method, a 1:1 ratio works perfectly when cooking rice. Because of the noodles, I’d add an extra 1/4 cup just in case! 🙂

  2. How many servings is this?

    1. Brooke Poston says:

Hi, Elise! It about 1/3 cup per person (a normal serving size of rice), it makes about 6 servings.
